Grilled Chicken Ranch Pizza

If I am being honest, baking bread is really not my strong suit. I struggle when it comes to using yeast, and quite frankly, it is probably because I have been too scared to try recipes that use yeast. But what is the best way to overcome your fears? Meet them head on.

Months ago, I found a recipe for homemade pizza dough on one of my favorite blogs, Annie’s Eats. It has been lost in the many other recipes I have in my big white binder. Actually, this entire recipe comes from Annie’s Eats. She has so many wonderful recipes, and her blog is so stunning. Check her out!

This weekend I felt up to a challenge, and the rest is history! Nothing like facing your fears on a Saturday! I was so glad I pulled out this recipe and gave it a try! The dough was so easy to make, and it came out looking beautiful. So, if you wanna face your fears of baking dough or using yeast, start with this recipe! You can’t go wrong!
4 chicken tenderloins, or 1 breast of chicken, grilled
Garlic & Onion grill seasoning, to taste
1 homemade pizza dough (recipe posted soon)

½ cup homemade Ranch dressing

3 green onions, chopped

1 tomato, diced

¾ cup Mozzerella cheese

¾ cup Cheddar cheese


Olive oil


Heat grill to high heat for 10 minutes. Brush tenderloins with olive oil on both sides. Sprinkle grill seasoning on both sides of chicken. When grill is ready, add chicken to the grill. Cook for 3 minutes, and turn over. Grill for 3 minutes on new side. Reduce heat to medium. Cook for 3-5 minutes on each side until done. Remove and slice chicken into bite size pieces. Set aside.

 Preheat oven and baking stone to 500 degrees.

 While oven is preheating, sprinkle a small amount of cornmeal onto parchment paper cut in the size of the baking stone. Roll out pizza dough into desired size and shape. Brush the outer edges (crust) with olive oil. Pour on ranch dressing to cover the inside area of the pizza. Spread on the mozzarella cheese. Add chicken, tomatoes, and green onions. Top with the cheddar cheese.

 Using a cutting board or another pizza pan, slide the pizza onto the heated stone. Bake at 500 degrees for 10-12 minutes. Mmmm!
