Fresh Pico de Gallo

Yummy Pico de Gallo

Mmmm…fresh pico!!! I could eat this any day, any time! Nothing beats fresh pico whether you eat it using tortilla chips, with fajitas, on a lite salad, or on  tacos! Pico is simple to make and it is healthy, too.


4 Roma Tomatoes, chopped

1 small onion, chopped

2 jalepenos, chopped and seeded


Sprinkle of Garlic Powder

Juice of half a lime

Fresh cilantro


1. Chop your tomatoes, onions and jalepenos and combine in a small serving bowl. Be sure to wash your hands immediately after chopping the jalepenos. Trust me on this!! If your want a little extra fire in your pico, leave the seeds from the pepper. The seeds hold the heat you might be looking for. 🙂

2. Add the salt, pepper, garlic powder and fresh cilantro into the bowl. Lightly toss.

3. Squeeze lime juice in with the rest of the vegetables. You will instantly smell the peppers, onions, tomatoes, cilantro become so frangrant and fresh. Oh, what a lovely smell! Mmmm. The lime awakens the pico!

4. Serve.

Note: Refrigerate. Fresh pico will not keep more than 24 hours.
